
The Sauce Subscription - June '25
The sun is shining, the shades are out and it’s time to have some fun. Anyone who makes it through Winter in the North-West deserves that.
There’s no better treat than a lovely glass of wine, but our tastes change when the heat is up!
That is why we are focusing on all things light and breezy, in the June edition of the Whole Bunch Wines Sauce Subscription. All the wines are fresh, vibrant and sure to go down an absolute treat when you’re enjoying them on a lovely Summer evening.

Red Wine
Gabrielskloof Whole Bunch Syrah [£36]
- Gabriëlskloof emphasises the use of indigenous yeast, whole bunch fermentation and ageing in amphora and older oak. All this is done to emphasise the flavours of the fruit and the terroir. This Whole Bunch Syrah is bursting with black and red fruit flavours, as well as subtle flecks of violet and white pepper.
Chateau du Coudray Montpensier Chinon [£23.50]
- A classic Loire Valley Cab Franc from 10 year old vines in the esteemed Chinon appellation. Bright and vibrant, full of notes of cherry, blackcurrant and raspberry, along with touches of blackcurrant leaf and liquorice.
Allegrini Valpolicella [£28]
- This is one of our top red wines for 2024. It is ruby red in colour, with youthful highlights. Fragrant fruit with prominent notes of dark cherries are echoed by fresher hints of pepper and aromatic herbs.
Dominique Morel Beaujolais-Villages [£24.50]
- Everything we love about Beaujolais. The Gamay grape delivers a light and fresh wine which has aromas of sweet red cherry. Acidic, but balanced. Definitely a wine which can spend 20 minutes in the fridge before opening.
Plantagenet Three Lions Pinot Noir [£28]
- The Plantagenet winery owns 126 hectares of vineyards in the Great Southern wine region. Their Pinot Noir delivers an abundance of bramble fruits with a touch of toasty oak to give a bit more body, complexity and texture.
Montes Outer Limits by Montes Old Roots Cinsault [£31]
- Cinsault is frequently used in Southern French rosé due to the grape being acidic and full of fresh red fruit flavours. This lends itself to fresh and fruity single varietal wines, such as this one by the iconic Chilean producer Montes.
White Wine
Axel Pauly Generations Riesling [£26.50]
- The wine matured on fine lees for four to five months. 'Generations' is classified 'Feinherb', an off-dry style of wine achieved by stopping the fermentation, leaving some residual sugar in the final wine. So, it has some richness. Yet, the blistering acidity helps to give this wine some zip and keep it feeling light and fresh.
Loimer Kamptal Grüner Veltliner [£25.50]

Everything you want, and more, from an Austrian Grüner. It is sharp, yet elegant and rich, coming from the esteemed Kamptal Region. This thoroughly complex wine delivers notes of orange zest, dried pineapple, white pepper, eucalyptus, lime jelly, grapefruit and gingerbread.
Bodegas Agerre Txakoli [£25]

The Bodegas Agerre Txakoli is a dry white wine which displays classic green apple and fresh lemon notes with a vibrant, sea-salty spritz from proximity to the Atlantic Ocean. The Spanish Vinho Verde. This is the ultimate aperitif wine!
Bodega Colomé Estate Series Salta Torrontés [£24]
- The grapes for this wine go through a DOUBLE selection process. Firstly, in the vineyard. Then, a second sorting occurs at the winery to ensure that only that most optimal grapes are selected. Rose and spice on the nose, then white grapefruit, pineapple, mango and melon on the palate. A pure delight.
Giovanni Almondo Bricco Cillegie Arneis [£39]
- High-quality and expertly crafted Piedmontese white wine. Unbelievably floral and herbal notes straight away - mint, white flowers and jasmine. Then, white orchard fruit, green pear and lemon. Exceptional!
Giustiniana Terre Antiche Gavi di Gavi [£23]
- Another Piedmontese classic - Gavi di Gavi. The grapes are gently pressed, before undergoing fermentation in temperature controlled stainless steel. The lemon yellow colour will imbue you with notes of lime, lemon, bergamot, underripe white peach and a mineral finish.
